Or improved processing of it, here's how

1)get a packaged mung bean starch ( or sometimes labelled as green bean starch) from Chinese market or other oriental markets.

2) dissolve 1 cup of mung bean starch into 1 cup of water, make sure you get good suspension

3) use a hot water bath to keep warm of 5-6 cups of boilin water in a container, slowly pour the mung bean starch suspension into the container while keep stiring the mixture

4) the liquid gets thicken after few minutes, keep stiring till it's almost transparent, and firm

5) cool it down in refrig

6) cut the gel into cubes or sticks and mix with suger, vinegar, seasam oil and a pan fried mixture of minced green onions, garlic, and hot red perper
