Innovative Computer Vision Technology for Food Quality Evaluation

Abstract: Computer vision technology has been applied increasingly for food quality evaluation in recent years. This paper firstly outline the principles upon which computer vision technology is based for food quality evaluation, which include image acquisition, image pre-processing, image segmentation, object measurement, feature selection, and classification. The advantages of computer vision technology for food quality evaluation were then demonstrated, such as rapid, objective, consistent, and non-contact. After that, some of the major food products of application computer vision for quality evaluation were briefly reviewed, including fishery, fruit, grain, meat, vegetable, and other products. Finally, the future perspectives and the remaining challenges were discussed.
