I guess my brain short-circuited :-)

Basically, Amazon/Create Space's template does not any language other than English, so I have to have the title/sub-title, etc. in English. In choosing the sub-title, I figured I better make sure people understand this is in Chinese, so I put in "Mandarin Chinese" (as opposed to "Cantonese"). Oh well.
